Ingredients
100ml (⅓ cup) milk (Just enough to cover the base of the whisk)
2 Hot Chocolate sachets (Darker varieties work beautifully here, like Dark 85%)
60g (¼ cup) unsalted butter, softened or cut into small pieces
30g (2½ tbsp) white sugar (Adjust to taste)
60g (½ cup) plain flour
1 egg
Method
Add the milk and two hot chocolate sachets to the Velvetiser, in that order. Select a warm cycle and allow the mixture to melt into a smooth, glossy chocolate base. If the whisk hesitates, pause the cycle, gently reposition, and continue.
While the Velvetiser is running, place the soft butter and sugar into a bowl and mix until combined.
Once the Velvetiser cycle finishes, slowly pour the warm chocolate mixture into the bowl, stirring gently with a fork until smooth and evenly combined. Reserve a small amount of the chocolate mixture for topping, if desired.
Add the flour and egg, stirring lightly to bring the mixture together.
Divide the batter between two microwave-safe cups, Podcups are ideal. Microwave on high for 1 minute 10 seconds, until the cake is just set with a molten centre beneath. Leave to rest for 30 seconds. For a single, larger bake, microwave for 1 minute 50 seconds.
Serve warm. Enjoy straight from the cup for effortless comfort, or turn out onto a plate and spoon the reserved chocolate sauce over the top for an elegant finish.
